Sam Zien — Sam the Cooking Guy — is the people's chef. The San Diego YouTuber built a cooking empire on a radical idea: great food doesn't need fancy technique, it needs a guy who loves eating telling you how to make it.
The style is the brand. No chef's whites, no pretension — just Sam in his backyard kitchen, cracking jokes, pouring wine, and turning out food that makes you hungry through the screen. It's cooking as entertainment first, instruction second, and it works.
The recipes are the substance. Beneath the shtick is a genuinely great cook — the smash burgers, the tacos, the comfort food elevated just enough. Millions of home cooks have Sam's videos saved as their weeknight playbook.
Not Not Tacos made it real. His Little Italy restaurant proved the YouTube fame could translate to actual plates — the concept, the execution, the lines out the door. The internet chef became a real restaurateur.
The cookbooks sealed it. Bestselling books that read like Sam talks — funny, direct, and full of food you'll actually make. The brand kept growing: more restaurants, more shows, more Sam.
He's part of the generation that proved YouTube could mint food stars without Food Network's permission — the anti-celebrity-chef who became a bigger celebrity than most chefs.

The shows keep expanding. New concepts, new kitchens, new ways to make people hungry — Sam's restlessness is the brand's engine. The backyard was just the beginning.
Previously covers Sam the Cooking Guy because the grill's always hot. Grab a plate — you know you want to.
The wine pairings are the vibe. Sam's backyard sessions pair every plate with a pour and a story — cooking as a lifestyle, not a lecture. The good life, televised.
The television run is where the legend actually started. Long before YouTube, Sam Zien talked his way onto San Diego television with a self-produced cooking show — no culinary school, no industry connections, just relentless self-belief. The show won multiple Regional Emmys, spread to other cities through deals with sister cable companies, and turned a guy with a camera into a legitimate television personality. It was a twenty-year crusade, in his publisher's words, to figure out what he wanted to do — and the camera was the answer all along.
The internet era began with "The Sam Livecast." On May 23, 2011, Zien started streaming a live cooking show from his home kitchen — three episodes a week, every week. After 200 live episodes he moved to a live-to-tape format, and the Livecast became Sam the Cooking Guy on YouTube, where the audience exploded past 3 million subscribers by the end of 2021. He saw the platform before the platform's stars did, and he brought the television polish with him.
There's a philosophy to the madness: "reality cooking." Whatever happens when he shoots stays in the show — the mistakes, the jokes, the off-script moments. His style is what he calls "big in taste, small in effort," and it's why millions of viewers who would never watch a chef show watch Sam. As he once told the San Diego Business Journal: he's not the chef showing off, he's the everyday man of cooking, and watching him makes you think, "I bet I can do that."
The restaurant years were real. After Not Not Tacos (2018), Zien opened Graze by Sam in March 2020 — a wine-focused restaurant and bottle shop — followed by Samburgers in 2021 and CooCoo's Nest in 2023, a fried-chicken spot with a 1970s flair, all in the Little Italy Food Hall with the Grain & Grit Collective. Then, in January 2025, he announced he was stepping away from the restaurant business entirely — out of Samburgers, Basta, and Not Not — to put his energy back where the audience is: the camera.
The cookbooks deserve their own chapter. "Recipes with Intentional Leftovers" (2020) is built around 20 bulk-cooking master dishes that shapeshift into more than 100 meals — roast chicken becomes Thai chicken curry becomes baked taquitos, Mexican meatloaf becomes tacos becomes sloppy joes. "Between the Buns" (2022) is his ode to the handheld: burgers, tacos, burritos, hot dogs — the best way to eat, as Sam would say. Both read exactly like he talks, which is the whole point.
His wife Kelly is part of the show's fabric — the family energy that keeps the whole enterprise grounded. Sam cooks, films, and lives in San Diego, and the brand has always felt like an extension of the household: the backyard kitchen, the wine, the friends who show up hungry. It's not a set. It's a life.
What makes Sam matter in the bigger picture is timing. He was proving that YouTube could mint food stars without television's permission while television was still his day job — then he outgrew it. The anti-celebrity-chef became a bigger celebrity than most chefs, and he did it without ever pretending to be anything other than a guy who really, really likes to eat.
Previously covers Sam the Cooking Guy because this is what the platform era was supposed to be — talent finding its audience with no gatekeeper in between. The camera's still rolling, the grill's still hot, and there's always room at Sam's table.
