The Best Craft Cocktails in Las Vegas, Bar by Bar: Signatures, Legends and One Perfect Sazerac

Forget the yard-long margaritas. These are the drinks Las Vegas bartenders built their names on — the off-menu legend, the rooftop ritual, the tiki canon — and exactly where to order each one.

Every serious bar city has a list of drinks you have to have in the place that made them matter. Las Vegas has spent fifteen years building one — quietly, away from the casino floor’s center bars, in speakeasies, tiki caves and one very famous chandelier. These are the essential pours: the signature creations, the house rituals, and the classics executed so well they became the bar’s calling card.

02 The Verbena — The Chandelier, The Cosmopolitan

Not on the menu. You have to know. Bartender Mariena Mercer created the Verbena at The Chandelier — a drink finished with a Szechuan flower, the famous “buzz button,” that sets your mouth tingling and amplifies every sip after it. Served on level 1.5 of the three-story crystal bar, it became the most talked-about cocktail in the city and a rite of passage for visiting bartenders. Mercer has since moved to Wynn Las Vegas and Encore as master mixologist; the Verbena still belongs to the Chandelier.

03 The Sazerac — Herbs & Rye

Some bars earn a classic. Herbs & Rye’s menu is organized by cocktail era — Gothic Age through Prohibition and beyond — and drinking writers point here first for a Sazerac or a Blood and Sand, executed with a historian’s discipline: rye, absinthe rinse, bitters, restraint. In a city that once ran on vodka and energy drinks, this off-Strip room on West Sahara set the standard every other classics program in town is still measured against.

04 The Hibiscus Paloma — Velveteen Rabbit

The Arts District original builds its reputation on house-made everything — seasonal menus, house syrups and infusions, a menu that arrives like a little art zine. The Hibiscus Paloma is the house in a glass: hibiscus-infused mezcal, tequila, grapefruit soda, lime and black lava salt. And check the seasonal list before you order — recent rotations have run to drinks like the Exquisite Corpse, built on coffee-infused reposado, ube agave and chocolate bitters. The menu turns over; the standard doesn’t.

05 The Build-Your-Own Old Fashioned — Legacy Club, Circa

Sixty floors above Fremont Street, Legacy Club turns the old fashioned into a ritual: pick your build at a rooftop bar wrapped around fire pits and a display of 1,000 ounces of gold. It’s the rare Strip-adjacent spectacle drink that is actually about the drink — a classic assembled to your spec, with the whole downtown skyline as the garnish.

06 Lemon Grass Clouds — Juliet Cocktail Room, The Venetian

The Venetian’s speakeasy-style lounge — velvet, art deco, live performances — signs its work with the Lemon Grass Clouds: Belvedere vodka, sweet vermouth and grapefruit, arriving with a little theater in the glass. It’s the polished end of Vegas cocktailing, a signature built for the room it lives in.

07 The Wake Up Call — Hard Shake, Waldorf Astoria

Every bar in town will sell you an espresso martini. Hard Shake clarifies theirs — the Wake Up Call, a clarified espresso martini with the texture turned silky and the flavor turned up, served in a sleek room above the Strip. Technique as the signature: that’s the modern Vegas flex.

08 The Rum Canon — Frankie’s Tiki Room

Tiki has classics too, and Frankie’s pours them in the dark, 24 hours a day, on West Charleston. Drinking guides credit it with some of the best rum drinks in town — no reinvention, no foam art, just the canon (the Mai Tai is the order) made strong and right at hours when the rest of the city’s cocktail bars are asleep.

09 The Sinatra Smash — Wynn Las Vegas

The Verbena’s only real rival in the city’s signature-drink canon lives at Wynn — the Sinatra Smash, the house legend of the resort’s cocktail program. Fittingly, Wynn is now home to Verbena creator Mariena Mercer Boarini as master mixologist: the two most famous drinks in Las Vegas, under one roof’s orbit.

10 Whatever’s on the Butcher Paper — Liquid Diet

No fixed menu, no signature — the list is scrawled on butcher paper above the bar in a former auto garage down an Arts District alley, and it changes constantly: culinary infusions, savory builds, whatever the crew is excited about this week. It landed on Esquire’s list of the best bars in America. The drink to order is the one that won’t exist next month.

The ruling: Las Vegas cocktailing grew up. The essential list isn’t a type of drink — it’s a map of rooms that each do one thing better than anywhere else in town. Start at level 1.5 of the Chandelier, and work your way off the Strip.
