A signature drink is a bar’s business card — the one pour a room is judged by, the order regulars give visitors without thinking. Our launch list covered the city’s best-known signatures; this month the series goes wider and deeper: eight more house drinks, each verified against the bar’s own menu or the local press that covers it, from the center Strip to Chinatown to a sunken pirate ship in the Arts District.
02 The Salt Air Margarita — Bazaar Meat by José Andrés, The Palazzo at The Venetian
José Andrés’s margarita replaces the salt rim with the salt itself, aerated: a classic margarita build of Milagro tequila and Combier, topped with a cloud of salt air, so every sip starts with the saline hit a rim only gives you once. It is the signature pour of Bazaar Meat, the chef’s live-fire steakhouse that spent a decade at Sahara Las Vegas before relocating to The Palazzo at The Venetian, reopening there on September 4, 2025. Order it before the steaks arrive — it was built for exactly that job.
03 Notes from Gordon — Gordon Ramsay Hell’s Kitchen, Caesars Palace
The signature cocktail at Ramsay’s Caesars Palace dining room is a gin drink with a punchline. Notes from Gordon blends Plymouth dry gin with green tea, lemongrass, peach and lemon, and arrives garnished with a small scroll printed with a surprise line from Gordon Ramsay himself — a fortune cookie for the Hell’s Kitchen faithful. Las Vegas Magazine calls it the drink fans of the show will love most on the list, and it remains the bar’s calling card years after opening.
04 The Scorpion — Peppermill Restaurant and Fireside Lounge
Some signatures are subtle. This one is 64 ounces. The Peppermill’s Scorpion — described by Las Vegas Magazine as the restaurant’s most-famous cocktail, with two shots each of vodka, rum and cherry brandy — is the house ritual of the Fireside Lounge, the neon-and-fire-pit room at 2985 Las Vegas Boulevard that has been a graveyard-shift and industry favorite for five decades. It is a drink built for a table, not a soloist: order it by the fire pit, and pace yourself.
05 The Painkiller — The Golden Tiki, Chinatown
The Golden Tiki’s twist on the Painkiller swaps the usual pineapple juice base for the bar’s calling card: pineapple Dole Whip. Per Las Vegas Magazine, the build is Pusser’s Rum, pineapple Dole Whip, orange and pineapple juices and coconut cream, garnished with fresh nutmeg — and you can ask to get it lit up with a shot of fire. The Chinatown tiki room at 3939 Spring Mountain Road lets you add Dole Whip to drinks across the menu, but the Painkiller is where the soft-serve earns its keep.
06 Twilight — Allē Lounge on 66, Resorts World Las Vegas
Sixty-six floors above the north Strip, Allē Lounge leads its own signature-cocktails list with the Twilight: No. 3 London Dry Gin, crème de violette, Chambord, lemon, egg white and simple syrup, per Resorts World’s official menu — a violet-purple gin sour built for the hour the lounge is named after. The same list runs to drinks like the Big Truffle in Lil’ China and a Cookie Butter Espresso Martini, but the Twilight is the one that carries the room’s name and altitude in a glass.
07 The Penicillin — The Dorsey, The Venetian
The Dorsey’s menu was designed by bartender Sam Ross of New York’s Attaboy, and its headline act is Ross’s own creation: the Penicillin — scotch, fresh lemon, ginger and honey under an Islay float. The Venetian’s launch release noted that The New York Times had named the Penicillin to its list of 11 essential drinks of the modern cocktail revival. In a casino-floor lounge off Restaurant Row, it is the rare Strip drink with a documented place in cocktail history.
08 A Little Birdie — Juniper Cocktail Lounge, Park MGM
Park MGM’s gin lounge — home, per MGM, to the largest collection of gin in Las Vegas — signs its work with a drink served in a bird-shaped glass. A Little Birdie, which Las Vegas Magazine calls one of Juniper’s iconic cocktails, combines gin, lemon juice, dry vermouth and house-made strawberry syrup, finished with Thai basil leaves set in the tail of the glass, so the aroma arrives with every sip. The lounge’s other party piece is the Carnival, where cotton candy melts into the pour at the table — but the Birdie is the signature.
09 Swig & Berries — Stray Pirate, Arts District
The Arts District’s sunken-pirate-ship tiki bar — a crew of pirates cursed into dogs, per the house legend — pours its heart on the menu. Swig & Berries, built on Hera the Dog vodka and Svöl Swedish aquavit with strawberry, rhubarb, lemon and rosewater per the bar’s official menu, sends a portion of its proceeds to the Nevada SPCA. Stray Pirate, at 1321 S. Commerce Street, was voted Best Cocktails in Las Vegas Weekly’s 2025 readers’ poll, and the Swig is the drink that explains both the bar and its following.
The ruling: A signature is a promise — one drink, made the house’s way, that a bar stakes its name on. Las Vegas keeps that promise in more kinds of rooms than any city in America: a chef’s theater at The Palazzo, a fire pit on the Boulevard, a soft-serve machine in Chinatown and a pirate ship downtown. Next month, the series leaves the signatures behind and goes neighborhood by neighborhood.
